Pops is the nest of two fledglings who have flown the snug Mare aux Oiseaux, a recognised talent hatcher helmed by Éric Guérin. In their eatery just off the seafront, Corentin Leverger and Océane Maisonneuve bend over backwards to regale diners with fresh premium, often organic produce such as girolles mushrooms or red mullet. Their creative bistronomic score rolls out a festival of textures and forthright flavours illustrated by a scrumptious tartlet of mushrooms, prepared in several ways (raw, cooked, in jelly, creamed and pickled).
