When it comes to the modern cuisine, each dish focuses on a fresh ingredient, cooked to perfection and served with a tip-top sauce or jus, eg mackerel confit, carrot, snow peas; haddock, einkorn, coconut milk sauce and red curry; pork filet mignon, pink onions, full-bodied gravy.
