Maurizio Oster is the name of the owner and chef of this modern, minimalist, almost purist-style little restaurant. His north German roots are also reflected in his cuisine – the region takes centre stage. Select seasonal produce is put to work imaginatively. The chef likes to play with different techniques and create interesting contrasts of flavours. The result is a well-conceived, coherently structured set menu, which also comes in a vegetarian version. The chef has a real penchant for fermenting, preserving and making vinegar. In addition to wine, there is a non-alcoholic accompaniment to the menu – here they only offer drinks they produce themselves. The staff are very friendly and well trained – the cooks also bring out the food and talk you through the dishes.
