In this country house that is typical of the area, chef Nicolas Laval, himself a local man (from Corrèze), has opted for a pared-back contemporary interior decor in a palette of light wood, blue and white, in a nod to the maritime world he so loves. Examples of his dishes include shredded beef cheek, parsnip mousseline, red wine reduction, tarragon; line-caught hake, cauliflower, orange gremolata, grapefruit, citrus vinaigrette.
