Pieter Riedijk, previously chef at Le Montgomerie (K2 Altitude in Courchevel), has come down into the valley to open this bistro serving "food for sharing". In an inviting and convivial rustic-style decor, he focuses on quality ingredients from the terroir, which he cooks simply: cep and aubergine marmalade, to be spread on toast; roast pork, straw potatoes and a good béarnaise sauce with plenty of vinegar; rhubarb meringue. His goal is to make the most of the treasure trove of seasonal produce the region has to offer in spring and summer. He selects local farm ingredients as well as picking some himself.
