The very high level of cuisine in this impeccable family-run eatery situated in the La Selva area (in the province of Girona) comes as a pleasant surprise. The restaurant, which owes its name to the three mature magnolia trees that surround this 19C building, has managed to bring itself up-to-date while maintaining the classic elegance that is part of its DNA. The focus of head chef Víctor Torres, who shares his time with the award-winning Quirat de la Ciudad Condal at the InterContinental Barcelona, is on modern, technical cuisine but without losing sight of traditional values, hence his strong commitment to local organic ingredients on an à la carte with half-plate options, and two tasting menus (“A Walk through Montseny” and “A Trip through Montseny”). The guiding principle here is one taken from the great Joan Miró: “A cook is transformed into an artist when he/she has things to say on the plate, in the same way as a painter on a canvas”.
