Caroline Blau and Tommy Medalle have set up shop in Ambialet, the village where Tommy is from, in a photogenic bend in the Tarn. They have transformed an old café nestling close to the riverbank and sporting a slightly old-fashioned brand of rustic charm. The menu, devised by the chef, may consist of simple dishes, but the results are exacting and exciting, ranging from classics such as marrow bone and soup of the day to more original creations like pork belly with daikon marinated and braised in mirin and sake, in a nod to Japan. The ingredients are fresh and high quality, and the service is down-to-earth and extremely pleasant. Very reasonable prices!
