Ouassous are large freshwater prawns. Very popular in Guadeloupe, they have almost disappeared from rivers. Hence the importance of Pointe-Noire's aquacultural centre, with the only ouassous hatchery in the Caribbean providing aquaculture farmers with larvae. Here you can join a tour with a commentary by a biologist, and buy fresh ouassous, which you can even eat here! You might also spot a snowy egret or osprey in their natural habitat.
